There are two qualities of Traditional Balsamic Vinegar of Modena D.O.P. and Acetaia Marchi offers both: Affinato and Extravecchio.
They differ from the other products for the long and particular period of refinement and/or ageing certified and proven by KIVA CERMET. These phases of maturation and fermentation are followed with extreme precision at our Acetaia in Modena. The final result is a pure and valuable product with an intense, deep and bright black colour.
This product is characterised by a unique and unmistakable bouquet, fragrant and complex, but nevertheless well blended, penetrating and persistent. The flavour is intense, with an evident but pleasant and harmonious acidity; it is sweet, sour and well balanced, velvety, intense and persistent. All this creates a perfect combination with the olfactory characteristics that distinguish our Traditional Balsamic Vinegar of Modena PDO.
For the production of our vinegar we scrupulously adhere to the Single Production Disciplinary, natural, artisan and traditional preparation. This allows us to bring the typical products of our land to our customers' tables in the most excellent way from every point of view.
