What are balsamic condiments?
We often hear about balsamic condiments and their use for recipes or for preparations of various kinds, without really knowing their nature. This article will explore this topic and present the most commonly used varieties of this extraordinary product.
Balsamic condiments are products that are different from balsamic vinegar, and are obtained by mixing cooked grape must with a quality wine vinegar. Just as with classic balsamic vinegar, this product is made to ripen in special wooden barrels. This allows the process of fermentation of the vinegar to take place and leads to the vinegar acquiring the scent and taste typical of the balsamic condiment. But how many types are there? Let us get to know the various balsamic condiments, citing their different peculiarities.
The differences between condiments and balsamic vinegar
First, it is necessary to explain the basic characteristics of this tasty product. You may have wondered what the difference is between balsamic vinegar and balsamic condiments. This may be mainly because the ingredients and the production process are very similar to those used in the preparation of Aceto Balsamico di Modena I.G.P. Traditional P.D.O. vinegar, on the other hand, is produced using only cooked must.
The condiments are distinguished from classic balsamic by their characteristic density and consistency. Among other things, they are not regulated by specifications such as the D.O.P. and I.G.P. and therefore do not need to undergo any specific ageing procedures. Furthermore, even the choice of bottling is reserved to the producer, who may use containers of any type.
As far as balsamic vinegar is concerned, this may only be marketed after a certain period of ageing. For Traditional D.O.P., in particular, the use of additives is not permitted. Furthermore, the product must only be bottled in 100 ml glass bottles designed by Giorgetto Giugiaro.

The difference between balsamic condiments and balsamic vinegar glaze
Balsamic vinegar is an ingredient loved worldwide for its unique and complex flavor, and so are balsamic condiments and balsamic vinegar glaze. These are highly valued products that boast different characteristics. What are the differences that should not be underestimated? Knowing them can help you make the ideal choice for your preparations.
Balsamic dressing is a versatile ally for flavoring salads and vegetables (also meat, fish and desserts)
Balsamic dressing is a vinegar-based product that is often used as a dressing for salads, vegetables, and cold dishes. Since it is a very versatile condiment, it can be included in a variety of recipes-from making a simple vinaigrette for salads to more complex dishes such as risottos and soups. It has a fluid consistency, similar to balsamic vinegar, and can be drizzled or poured directly over food.
The best quality balsamic seasonings have a balanced flavor that comes across as a perfect blend of sweetness and acidity. They are made with a few first-rate ingredients: concentrated must from local grapes and wine vinegar. After that, they are aged in ancient barrels made of various fine woods. This aging sets in motion the process of acetic fermentation that will create an explosion of flavors.
Balsamic vinegar glaze: what it is and how it differs from balsamic condiments
Balsamic glaze is a thick, syrupy, reduced version of balsamic vinegar. Other foods such as flour, sugar, butter and starches are added to this ingredient. This is definitely the main difference between icing and balsamic condiments: the ingredients change everything, from quality to taste. They give rise to a thick, syrupy consistency that makes frosting a more industrial product, to be used especially for decorating dishes and culinary creations of various kinds.
Glaze or seasoning?
When making the choice, it is important to consider that frostings look like a more industrial product, and therefore of lower quality. Our Balsamic Dressings, on the other hand, are natural and genuine products: a true "mix" of IGP and DOP, and during production they are decanted into different wooden barrels and capacities just as they are for Traditional Balsamic Vinegar of Modena DOP. Thanks to our artisanal techniques, we are able to come up with qualitative seasonings that are very dense, valuable and tasty.
Our range of Balsamic Dressings is designed for those who love the "sweeter" and less acetate-like flavors, but still authentic and non-industrial. You can find all of our products QUI.
Balsamic condiments and other products: our craft production
In summary, the main difference between balsamic dressing and balsamic vinegar glaze lies in the ingredients that characterize their textures, flavors, quality, and culinary uses. Balsamic dressing is a versatile qualitative companion for salads, hot and cold dishes.(Not only that) To learn more about the production of the balsamic condiments and balsamic products, you can book a visit in our Acetaia. You can see what techniques are used and the precious barrels, passed down from generation to generation, that preserve our Balsamic Vinegar throughout the aging period. At this page you can view more information about the different types of visits, durations, and how to make reservations. We look forward

The true soul of every Modena vinegar house? Its Balsamic Condiments
The beautiful city of Modena is world famous for a very special product: Balsamic Vinegar. But where is Balsamic Vinegar produced? And what other special products are linked to Balsamic Vinegar? For example, the tasty balsamic condiments. With this article we will try to discover this world of taste.
Balsamic Vinegar of Modena, what it is
Balsamic Vinegar of Modena PGI and Traditional Balsamic Vinegar of Modena PDO are vinegars obtained in particular climatic and production conditions. To obtain an original product, grapes grown in the Modena area must be used, the musts must be cooked in a special way, and the traditional procedures of decanting from barrel to barrel must be respected. In fact, the product is aged in barrels, casks or vats made of precious wood. A production handed down from generation to generation. The original is produced between the provinces of Modena and Reggio Emilia, obtained from Sangiovese, Lambrusco, Trebbiano, Albana, Ancellotta, Fortana and Montuni grape musts, to which wine vinegar is added (10%) and a part of old vinegar, which must be at least 10 years old.
Balsamic Vinegar how it is made
.
Crushing the grapes produces a must that is cooked and matured through natural fermentation, with progressive concentration and ageing, not less than 12 years. It is marketed in two variants, the refined with 12 years of ageing or the extra-mature, which remains in the casks for at least 25 years. The process of acetifying the must can take place in various ways. The acetaia is the place, usually an attic, where the batteries for the production of Traditional Balsamic Vinegar of Modena PDO are located. A 'battery' is defined as a set of casks, of different capacities and placed according to scale, from the largest to the smallest. Finally, not everyone knows that real Balsamic Vinegar of Modena can only be bottled in a 100 ml bottle, designed by Giorgetto Giugiaro, the same for all producers.
Balsamic condiments what they are
.
There is not only Balsamic Vinegar. Another Modena delicacy are the balsamic condiments made by mixing concentrated grape must with a quality wine vinegar. This product too is matured in special wooden barrels. In this way, thanks to the fermentation of the vinegar, the food acquires the typical aroma and flavour of the balsamic condiment.
The differences between condiments and Balsamic Vinegar
.
Balsamic condiments do not have to comply with strict specifications such as D.O.P. and I.G.P. and therefore do not have to undergo specific ageing procedures. There are different types of balsamic condiments on the market, characterised by varying acidity and density. The best are 100% natural, containing no preservatives, colouring agents, thickeners, antioxidants, sweeteners or added sulphites.
How to use balsamic condiments in cooking

How to use balsamic condiments in cooking
If you love balsamic condiments and would like to find out more about new ways of making full use of their culinary characteristics, read on. We'll be offering suggestions, solutions and products you should try as soon as possible.
What are balsamic condiments and what are their main characteristics?
Balsamic condiments are food and wine products made from cooked must and wine vinegar. The combination of the latter, following the achievement of acetic fermentation, allows the development of different notes of flavour capable of enveloping and conquering every palate. In most cases, these condiments are dark and boast a sweet and sour flavour. There are various types, differing in density and taste.
Balsamic condiments owe their deliciousness above all to the ageing to which they are subjected: they are left to rest in wooden barrels for a long time. This allows them to acquire different nuances of flavour, which vary according to the type of wood in which they are stored. The role of balsamic condiments is to enhance the flavour of each dish and give each dish many different nuances of taste.
How to use these products in the kitchen?
These products are particularly popular because of their versatility. In fact, they can be used for both starters and other courses (including dessert). The purpose of balsamic seasonings is to enhance the flavour of the dishes they are to season, but not to conceal it. It is therefore important to dose them carefully, so as not to cover up too much of the taste of the dishes. Depending on the type of product and the seasoning chosen, it will be possible to create a combination of flavours that will tickle even the most difficult palates.
There are so many recipes for using these condiments in the kitchen. They are best appreciated in combination with cooked and raw vegetables. They can also be used for the preparation of meat dishes and to further flavor buffalo mozzarella , some sauces and salads .
They can even enhance certain desserts: balsamic dressings are particularly good in fruit salads or in combination with jams. In any case, they can reawaken traditional flavours and add great quality to prepared dishes.
