Bruschette with Confit Cherry Tomatoes and Balsamic Vinegar

Ingredients:

  • Datterino tomatoes 500 g
  • Garlic 1 clove
  • Sugar 25 g
  • Extra virgin olive oil MARKS
  • Dried oregano to taste.
  • Fine salt to taste.
  • Black pepper to taste.
  • Balsamic Vinegar of Modena Igp Platinum Seal MARKS
  • Bruschetta bread (to taste)

Bruschette with Confit Cherry Tomatoes and Balsamic Vinegar

Ingredients:

  • Datterino tomatoes 500 g
  • Garlic 1 clove
  • Sugar 25 g
  • Extra virgin olive oil MARKS
  • Dried oregano to taste.
  • Fine salt to taste.
  • Black pepper to taste.
  • Balsamic Vinegar of Modena Igp Platinum Seal MARKS
  • Bruschetta bread (to taste)

Preparation

To prepare the Confit cherry tomatoes, wash the cherry tomatoes under running water and dry them with a dish towel or kitchen paper;
Place them on a cutting board, then cut all the cherry tomatoes in half.
Place some baking paper on a baking sheet and arrange the cut cherry tomatoes (with the cut side facing up), salt and pepper to taste.
At this point prepare the chopped garlic and place it on top of each cherry tomato, add the sugar, a few drops of balsamic vinegar of Modena Igp Sigillo Platino MARCHI, the oregano and finally pour a drizzle of oil over each cherry tomato.


Bake for about two hours in a preheated oven at 140°, until the water in the cherry tomatoes has evaporated;
Toast some bread with a drizzle of oil in a frying pan; arrange the bread on a serving plate, lay the cherry tomatoes on top and, if you like, add another drizzle of oil.
