  • Rosemary, fine salt, and black pepper to taste.

The preparation of grilled leeks with Balsamic Vinegar of Modena IGP

The first step you need to take is to carefully clean the leeks. You should remove the outer parts and leave only the tender inner part, known as the heart of the leek. At this point, wash them thoroughly under running water, then immerse them in a pot of boiling salted water. After fifteen minutes of cooking over medium heat, you can drain the leeks and leave them in a colander to eliminate any excess water.

Using a preheated non-stick grill, proceed to grill the leeks, which should take about ten minutes. During this phase, turn the leeks so that they cook evenly. When finished, place them on a serving plate.

Next, you can prepare the seasoning for the grilled leeks: wash and finely chop the herbs (mint, parsley, dill, and rosemary) on a cutting board.
