This high-quality product owes its vibrant hue to Ancellotta must, a rare and prized grape variety grown in our vineyards, known for its ability to impart color not only from the skin but also from the pulp, thus offering a completely natural coloring.

Unlike traditional methods that involve cooking, we use a vacuum evaporation process, which preserves the light color and delicate fruity notes of the must. This innovative approach allows the organoleptic characteristics to remain intact, ensuring a final product that enriches with nuances over time.
Our condiment matures in new oak barrels, for a carefully studied period to avoid oxidation and the consequent color change towards orange hues. During this process, the wood imparts spicy notes and an aromatic complexity that harmoniously blends with the freshness of the must.
