Each phase of the processing will be presented to the visitor by knowledgeable staff in every aspect, from the grape pressing to the cooking of the must and the refining or aging in wooden barrels.
The barrels are stored in “batteries,” which means a group of at least three barrels that follow the three main phases: fermentation, maturation, and aging. The three barrels in the battery have different capacities, from the largest to the smallest, and with different essences that will give different qualities to the Vinegar, both from a visual, olfactory, and tasting perspective.
Thanks to the guides’ instructions, it will be possible to understand the many nuances that are contained in this pure product, which is referred to by locals as “The Black Gold of Modena.”
