To prepare tasty tacos for 4 people, you will need the following ingredients.
- One celeriac,
- 500 g of milk,
- Traditional Balsamic Vinegar of Modena DOP,
- Arugula,
- Pepper,
- One lemon,
- Pecorino Romano D.O.P.,
- Extra virgin olive oil,
- Salt to taste.

The preparation
To prepare the celeriac tacos with balsamic vinegar, start by cleaning the celeriac. Then, season it with extra virgin olive oil, pepper, and a pinch of salt. Wrap your vegetable in a sheet of aluminum foil and bake in the oven at 180°C. Once ready (it will be when the internal temperature reaches 84°C), remove it from the oven and let it cool. Then slice it into about 20 slices and trim the slices to obtain perfect discs (we recommend using a small round cookie cutter).
At this point, toast the celeriac discs using a well-heated pan. Separately, slightly heat the milk without letting it boil. Squeeze the lemon, add the juice to the milk, and let the mixture thicken. Once done, to prepare the celeriac tacos recipe, strain the curds through a cheesecloth and gently mix in salt and pepper.
