Courgette pie with Balsamic Vinegar of Modena I.G.P.

Courgette pie with Balsamic Vinegar of Modena P.G.I. is a dish that offers a mix of excellent flavours. It is nutritious and filling, making it an ideal appetizer for special occasions. If prepared in larger portions, it can also become a delicious main course. The important thing is to choose the right balsamic vinegar!

INGREDIENTS:

3 Zucchine
4 Eggs
1 tablespoon Parmesan cheese
1 garlic clove
Extra virgin olive oil
Salt
Parsley
Balsamic Vinegar of Modena PGI

PREPARATION:

To prepare the courgette pie with Balsamic Vinegar of Modena I.G.P., start by washing and slicing the courgettes. Cook them in a frying pan with a clove of garlic and a little oil. When the courgettes are cooked, leave them to cool and then blend them in a mixer or blender, adding the eggs, Parmesan cheese, salt and pepper.

Pour the creamy mixture into some moulds and bake at 180° for about 15 minutes. When cooked, arrange the courgette pie on a serving plate and glaze with Balsamic Vinegar of Modena I.G.P.
