Even when it comes to our Organic Sweet and Sour Black Cherry Sauce & Organic Balsamic Vinegar of Modena I.G.P., quality is guaranteed by the genuineness of the raw materials used. They all come from our territory. The fruit, coming from organic cultivations, is carefully selected. It is then subjected to some slow cooking processes, which reproduce the traditional peasant procedures.
The fruit is placed in open boilers over direct heat and gently cooked according to the traditional method. In this way, the fruit retains its flavour. All fruit and only the sugars it naturally contains: that’s our solution. We prefer the simplest recipes and value tradition. We do not use colouring agents, preservatives, thickeners, antioxidants or added sulphites, but we do have one of the highest fruit contents on the market.
To make our sauces taste better, we use our best organic Balsamic Vinegar of Modena I.G.P., which creates a wonderful contrast between the acidity and sweetness of the fruit. This combination allows us to guarantee products with unique flavours and aromas that fully satisfy the palate. Our Organic Sweet & Sour Black Cherry Sauce & Organic Balsamic Vinegar of Modena I.G.P. is very popular when served with Parmesan and/or aged pecorino cheese. It is ideal on polenta croutons and is suitable for meats (especially game) and to enhance the delicate flavour of ricotta.
